While there are literally hundreds of different guisados in mexico, we hand picked two of the most representative of the mexican cuisine. Not only are these recipes scrumptious and filling, they also come from the pacific coast of jalisco! The land of the Tequila, the mariachi and where we are from.
Historically made by the Aztecs in mexico, pozole is a dish served throughout mexico to celebrate special occasions using cacahuazintle ( a unique corn found in mexico), spices and chiles. Our pozole is an authentic, bold, hearty stew with tender, slow-roasted pork. Shredded lettuce, onions, radishes and tostadas are served on the side.
Originally from Jalisco, Birria is a delicious and distinctive mexican stew made with freshly chopped roasted lamb in a savoury broth base. Its unique and traditional flavour derives from using a base of dried, roasted peppers for the broth. Served with corn tortillas, onions, and limes in the side.
